  • 2 pieces carrots fresh and vibrant
  • 1 cup dried cranberries substitutable with raisins or chopped dates
  • 0.5 cup chopped walnuts optional, can replace with pecans or omit
For the Dressing
  • 2 tablespoons fresh lemon juice freshly squeezed is best

Method
 

Preparation Instructions
  1. Wash and core the apples, then chop into bite-sized pieces.
  2. Peel and shred the carrots using a box grater or food processor.
  3. In a mixing bowl, combine shredded carrots, chopped apples, dried cranberries, and chopped walnuts.
  4. In a small bowl, whisk together lemon juice, salt, and black pepper.
  5. Pour the dressing over the salad mixture and toss gently to combine.
  6. Cover and refrigerate for 10-15 minutes before serving.
  7. Serve chilled, garnished with additional walnuts or cranberries if desired.
