Step-by-Step Instructions for BBQ Chicken Casserole
  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop sweet potatoes into 1-inch cubes, then cook in boiling water for 20-25 minutes until tender.
  3. Drain sweet potatoes, return them to the pot, add ghee, and mash until smooth.
  4. In a skillet, heat olive oil over medium heat. Sauté cubed chicken seasoned with salt and pepper for 2-3 minutes on each side until cooked through.
  5. Shred cooked chicken with two forks and set aside.
  6. Combine shredded chicken with crumbled bacon and ½ cup of BBQ sauce in a bowl, stirring until well coated.
