Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Carefully slice the spaghetti squash in half lengthwise. Scoop out the seeds and place each half cut-side down on a baking sheet lined with parchment paper.
  3. Bake the squash in the preheated oven for 30-45 minutes until tender.
  4. While roasting, shred the rotisserie chicken into a mixing bowl and pour BBQ sauce over it.
  5. Once the squash is cool, scrape the strands into a bowl and mix with the BBQ chicken mixture.
  6. Spoon the mixture back into each squash half and top with shredded cheese and sliced red onions.
  7. Return to the oven for another 5-10 minutes until the cheese is melted and bubbly.
