- Preheat your oven to 400°F (200°C).
- Carefully slice the spaghetti squash in half lengthwise. Scoop out the seeds and place each half cut-side down on a baking sheet lined with parchment paper.
- Bake the squash in the preheated oven for 30-45 minutes until tender.
- While roasting, shred the rotisserie chicken into a mixing bowl and pour BBQ sauce over it.
- Once the squash is cool, scrape the strands into a bowl and mix with the BBQ chicken mixture.
- Spoon the mixture back into each squash half and top with shredded cheese and sliced red onions.
- Return to the oven for another 5-10 minutes until the cheese is melted and bubbly.
