- Preheat your oven to 350°F (177°C) and line an 8" or 9" square baking pan with foil.
- Combine melted unsalted butter, granulated sugar, vanilla extract, salt, and lemon zest. Mix until smooth then add flour to form a crumbly dough.
- Set aside 3/4 cup of the mixture for topping and press the rest into the bottom of the pan. Bake for 18 minutes until lightly golden.
- Beat softened cream cheese until smooth, then gradually add sugar and lemon zest until well combined.
- Add eggs, yogurt or sour cream, and a pinch of salt to the mixture. Mix well then fold in flour and blueberries.
- Pour the filling over the baked crust and sprinkle reserved crust mixture on top. Bake for 55-60 minutes until set.
- Cool at room temperature for 30 minutes, then refrigerate for at least one hour before slicing.
- Lift the bars out of the pan using the foil. Slice into squares and serve.
