Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (177°C) and line an 8" or 9" square baking pan with foil.
  2. Combine melted unsalted butter, granulated sugar, vanilla extract, salt, and lemon zest. Mix until smooth then add flour to form a crumbly dough.
  3. Set aside 3/4 cup of the mixture for topping and press the rest into the bottom of the pan. Bake for 18 minutes until lightly golden.
  4. Beat softened cream cheese until smooth, then gradually add sugar and lemon zest until well combined.
  5. Add eggs, yogurt or sour cream, and a pinch of salt to the mixture. Mix well then fold in flour and blueberries.
  6. Pour the filling over the baked crust and sprinkle reserved crust mixture on top. Bake for 55-60 minutes until set.
  7. Cool at room temperature for 30 minutes, then refrigerate for at least one hour before slicing.
  8. Lift the bars out of the pan using the foil. Slice into squares and serve.
