Ingredients
  

For the Salad
  • 1 cup Fresh Blueberries Use fresh for optimal texture and flavor.
  • 2 pieces Ripe Peaches Can substitute with nectarines.
  • 1/2 cup Crumble Feta Cheese Goat cheese or mozzarella can be used.
  • 4 cups Mixed Greens Can substitute with baby spinach or arugula.
  • 1/4 cup Chopped Red Onion Shallots can be used for a milder flavor.
  • 1/4 cup Chopped Walnuts Can omit for nut-free enjoyment.
For the Dressing
  • 2 tablespoons Honey Agave syrup or maple syrup are alternatives.
  • 1 tablespoon Balsamic Vinegar Apple cider vinegar works as an alternative.
  • 2 tablespoons Olive Oil Avocado oil is another healthy option.
  • 1 pinch Black Pepper Sea salt can also be added.

Method
 

Instructions
  1. Rinse 1 cup of fresh blueberries under cold running water, then pat them dry.
  2. Slice 2 ripe peaches into wedges, about 8-10 wedges per peach, and add to a mixing bowl with blueberries.
  3. Sprinkle 1/2 cup of crumbled feta cheese over the fruit mixture in the bowl.
  4. Wash and dry 4 cups of mixed greens, then add them to the bowl and gently toss.
  5. Chop 1/4 of a red onion finely and sprinkle it over the salad mixture, then toss gently.
  6. Roughly chop 1/4 cup of walnuts and add them on top of the salad, then stir gently.
  7. Whisk together 2 tablespoons of honey, 1 tablespoon of balsamic vinegar, 2 tablespoons of olive oil, and a pinch of black pepper in a small bowl.
  8. Drizzle the dressing over the salad and gently toss to combine without squishing the fruit.
  9. Taste the salad and adjust seasoning with more black pepper or salt if necessary.
  10. Serve immediately or refrigerate for up to an hour before serving.
