- Rinse 1 cup of fresh blueberries under cold running water, then pat them dry.
- Slice 2 ripe peaches into wedges, about 8-10 wedges per peach, and add to a mixing bowl with blueberries.
- Sprinkle 1/2 cup of crumbled feta cheese over the fruit mixture in the bowl.
- Wash and dry 4 cups of mixed greens, then add them to the bowl and gently toss.
- Chop 1/4 of a red onion finely and sprinkle it over the salad mixture, then toss gently.
- Roughly chop 1/4 cup of walnuts and add them on top of the salad, then stir gently.
- Whisk together 2 tablespoons of honey, 1 tablespoon of balsamic vinegar, 2 tablespoons of olive oil, and a pinch of black pepper in a small bowl.
- Drizzle the dressing over the salad and gently toss to combine without squishing the fruit.
- Taste the salad and adjust seasoning with more black pepper or salt if necessary.
- Serve immediately or refrigerate for up to an hour before serving.
