Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Take your large baking potatoes and halve them lengthwise, then cut each half into three wedges.
  3. In a large pot, heat enough vegetable oil to create a depth of about 2 inches until it reaches 350°F (180°C).
  4. Carefully lower the potato wedges into the hot oil in batches, frying for about 5-6 minutes until golden brown.
  5. Transfer the fried potato wedges onto paper towels to drain excess oil.
  6. Place your crispy potato wedges on a baking sheet lined with parchment paper and season with kosher salt and coarse ground black pepper.
  7. Sprinkle ¾ of the shredded cheddar cheese and half of the crumbled bacon on top of the wedges.
  8. Bake in the preheated oven for 15 minutes, then add the remaining bacon and bake for an additional 5 minutes.
  9. Once golden and bubbly, let them cool for a few minutes before serving.
