- Preheat your oven to 350°F (175°C).
- Take your large baking potatoes and halve them lengthwise, then cut each half into three wedges.
- In a large pot, heat enough vegetable oil to create a depth of about 2 inches until it reaches 350°F (180°C).
- Carefully lower the potato wedges into the hot oil in batches, frying for about 5-6 minutes until golden brown.
- Transfer the fried potato wedges onto paper towels to drain excess oil.
- Place your crispy potato wedges on a baking sheet lined with parchment paper and season with kosher salt and coarse ground black pepper.
- Sprinkle ¾ of the shredded cheddar cheese and half of the crumbled bacon on top of the wedges.
- Bake in the preheated oven for 15 minutes, then add the remaining bacon and bake for an additional 5 minutes.
- Once golden and bubbly, let them cool for a few minutes before serving.
