Step-by-Step Instructions
  1. Heat a large oven-safe skillet over medium heat and lightly spray with cooking oil. Add the lean ground beef and diced onion, cooking for about 8-10 minutes until browned and translucent.
  2. Stir in 3 tablespoons of taco seasoning and ½ cup of prepared salsa. Cook for an additional 2-3 minutes until heated through.
  3. Add 15 oz of canned black beans, 15 oz of canned sweet corn, and 10 oz of canned diced tomatoes with their juices. Stir and bring to a gentle simmer, cooking for 5-6 minutes.
  4. Stir in 8.5 oz of prepared ready rice, ensuring it’s evenly distributed. Top with 4 oz of shredded Colby Jack cheese.
  5. Preheat the oven broiler to high. Broil for about 1-2 minutes until the cheese is bubbly and golden brown.
  6. Remove from the oven, garnish with fresh cilantro and enjoy with optional toppings.
