- Heat a large oven-safe skillet over medium heat and lightly spray with cooking oil. Add the lean ground beef and diced onion, cooking for about 8-10 minutes until browned and translucent.
- Stir in 3 tablespoons of taco seasoning and ½ cup of prepared salsa. Cook for an additional 2-3 minutes until heated through.
- Add 15 oz of canned black beans, 15 oz of canned sweet corn, and 10 oz of canned diced tomatoes with their juices. Stir and bring to a gentle simmer, cooking for 5-6 minutes.
- Stir in 8.5 oz of prepared ready rice, ensuring it’s evenly distributed. Top with 4 oz of shredded Colby Jack cheese.
- Preheat the oven broiler to high. Broil for about 1-2 minutes until the cheese is bubbly and golden brown.
- Remove from the oven, garnish with fresh cilantro and enjoy with optional toppings.
