  • 4 cups vegetable broth low-sodium preferred
  • handful fresh herbs (thyme or parsley) dried can substitute
  • 1 cup peas optional, fresh or frozen

Cooking Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves, sautéing until the onions become translucent, about 5 minutes.
  2. Stir in 2 diced carrots, 2 stalks of chopped celery, and 2 cubed potatoes. Cook for about 5 minutes until they start to soften.
  3. Pour in 4 cups of vegetable broth and add a handful of chopped fresh thyme or parsley. Increase the heat to bring to a gentle boil.
  4. Reduce the heat to low, cover the pot, and let the stew simmer for 30 minutes, stirring occasionally.
  5. Taste and season with salt and pepper. Serve warm in bowls, garnished with extra herbs if desired.
