  • 1 small Onion, chopped
  • 3 cloves Garlic, minced
For the Veggies
  • 1 medium Potato, cut into wedges Can substitute with sweet potatoes
  • 1 medium Carrot, cut into wedges
  • 1 medium Green Bell Pepper, cut into squares
For the Protein
  • 2 pounds Chicken Thighs or drumsticks recommended
For Flavoring
  • 2 tablespoons Fish Sauce Can substitute with soy sauce
  • 2 tablespoons Curry Powder Adjust to taste
  • 1 tablespoon Paprika Powder Optional
  • 0.5 teaspoon Ground Black Pepper
For the Creamy Sauce
  • 1 can Coconut Milk 400ml
For the Heat
  • 1 piece Fresh Chili Pepper, cut into pieces Or use dried chili flakes

Method
 

Step-by-Step Instructions
  1. Heat vegetable oil over medium heat and fry potato and carrot wedges for 5-7 minutes until golden brown. Remove and set aside.
  2. In the same pan, sauté onion and garlic until translucent and fragrant.
  3. Add chicken and sear on each side for about 1 minute until browned.
  4. Sprinkle in fish sauce, curry powder, paprika, and black pepper. Stir and simmer for about 5 minutes.
  5. Pour in the coconut milk and let it simmer for 15 minutes until thickened.
  6. Add cooked potatoes, carrots, bell pepper, and chili pepper and warm through for one minute.
  7. Serve hot with steamed rice or flatbread.
