Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). In a large baking dish, combine the coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil. Whisk until smooth.
  2. Add the chopped bok choy and sliced zucchini to the baking dish. Toss until fully coated in the creamy broth.
  3. Arrange the frozen dumplings in a single layer on top of the vegetables, pressing them lightly into the broth.
  4. Cover the baking dish with foil and bake for 20 minutes to steam the dumplings.
  5. Remove the foil and bake for an additional 5-10 minutes until the dumplings are crispy on top.
  6. Garnish with sesame seeds, green onions, and cilantro. Serve hot over jasmine rice or noodles.
