  • 1 teaspoon Smoked Paprika or regular paprika for milder flavor
  • 1 teaspoon Garlic Powder can omit or substitute with fresh garlic
  • 1 teaspoon Lemon Zest or lemon juice if necessary
For the Tartar Sauce
  • 1 cup Mayonnaise or vegan mayo for dairy-free
  • 1/4 cup Dill Pickles diced, can substitute with any pickled cucumber
  • 1 tablespoon Capers
  • 1 tablespoon Fresh Dill or dried dill, reduce amount
  • to taste Salt
  • to taste Pepper

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with a wire rack.
  2. Pat the cod fillets dry with paper towels and season both sides with salt, pepper, smoked paprika, garlic powder, and lemon zest.
  3. Set up three shallow bowls: one with flour, one with whisked eggs, and one with panko breadcrumbs.
  4. Coat each fish fillet with flour, then dip in egg, and finally coat in panko breadcrumbs.
  5. Arrange the coated fish sticks on the wire rack and lightly mist with cooking spray.
  6. Bake in the preheated oven for 12-15 minutes, flipping halfway through until golden brown and internal temperature reaches 145°F (63°C).
  7. Whisk together mayonnaise, diced pickles, capers, lemon juice, and fresh dill for tartar sauce; chill until serving.
  8. Serve hot with tartar sauce, garnished with lemon wedges and fresh dill.
