  • 4 ounces Cheese use mozzarella or cheddar
  • 1/2 cup All-Purpose Flour substitute with gluten-free flour if needed
For the Coating
  • 1/2 cup Breadcrumbs use panko for extra crispiness
  • as needed tablespoons Vegetable Oil for frying
For Seasoning
  • Seasonings (Salt, Pepper, Paprika) adjust to taste
  • Optional Veggies (Bell Peppers, Jalapeños) chopped finely

Method
 

Preparation Steps
  1. Drain the canned corn in a colander and transfer to a mixing bowl.
  2. In a separate bowl, mix the cheese with any wet ingredients until smooth.
  3. Whisk together the flour, breadcrumbs, and seasonings in another bowl.
  4. Fold the corn mixture into the dry ingredients until combined.
  5. Shape the mixture into bite-sized balls.
  6. Heat oil in a skillet to 350°F (175°C) or preheat the oven to 350°F.
  7. Fry the bites in batches for 3-4 minutes until golden brown or bake for 20-25 minutes.
  8. Let the cooked bites drain on paper towels before serving.
