  • 1/2 cup all-purpose flour Adds additional texture to bind the fritters well.
  • 1 teaspoon salt Enhances the flavor of all other ingredients; adjust to taste if desired.
  • 1/2 teaspoon black pepper Adds mild heat and depth; fresh ground is best for maximum flavor.

Step-by-Step Instructions for Crispy Fried Pickle Fritters
  1. In a large bowl, combine 1 cup of self-rising cornmeal, 1/2 cup of all-purpose flour, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of garlic powder. Whisk together until well-blended.
  2. Add in 1 finely diced sweet onion and 1 cup of coarsely chopped dill pickles to the dry mixture, tossing gently to coat.
  3. In a separate bowl, crack 1 large egg and beat it into 1/2 cup of buttermilk until smooth. Pour the wet mixture into the dry ingredients and stir until just combined.
  4. In a large skillet, pour in enough vegetable oil to reach about 1 inch depth and heat the oil over medium heat until it reaches 350°F.
  5. Once the oil is hot, drop spoonfuls of the batter into the skillet. Fry each fritter for about 4-5 minutes, then gently flip them for an additional 4-5 minutes.
  6. Using a slotted spoon, remove the fritters from the hot oil and place them on paper towels to drain excess oil. Allow to cool slightly before serving.
