Ingredients
  

For the Cookie Crust
  • 24 cookies Chocolate Cookies Pre-made or homemade
  • 1/2 cup Butter Melted
For the Cheesecake Filling
  • 16 oz Cream Cheese Room temperature
  • 1/2 cup Granulated Sugar Brown sugar can be substituted
  • 1/2 cup Sour Cream or Yogurt Can substitute with heavy cream
  • 2 large Eggs Room temperature
  • 4 oz Dark Chocolate Melted
  • 4 oz Milk Chocolate
  • 4 oz White Chocolate
For the Toppings
  • 1 cup Chocolate Ganache
  • 1 cup Chocolate Whipped Cream Regular whipped cream can be used

Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C). Crush chocolate cookies into crumbs and mix with melted butter. Press into muffin pan. Bake for 8-10 minutes, then cool.
Make Cheesecake Filling
  1. Beat cream cheese until smooth. Gradually add sugar, then sour cream, followed by eggs one at a time. Fold in melted dark chocolate until combined.
Fill Muffin Pan
  1. Pour cheesecake filling over cooled crusts until three-quarters full. Smooth tops and preheat oven to 325°F (160°C).
Bake
  1. Bake filled muffin pan for 20-25 minutes until edges are set but center is slightly jiggly. Cool on a wire rack.
Chill
  1. After 30 minutes at room temperature, transfer cheesecakes to the refrigerator for at least 1 hour.
Top and Serve
  1. Remove cheesecakes from the pan. Top with chocolate ganache and chocolate whipped cream. Garnish with chocolate shavings or fresh berries.
