Prepare the Crust
- Preheat your oven to 350°F (175°C). Crush chocolate cookies into crumbs and mix with melted butter. Press into muffin pan. Bake for 8-10 minutes, then cool.
Make Cheesecake Filling
- Beat cream cheese until smooth. Gradually add sugar, then sour cream, followed by eggs one at a time. Fold in melted dark chocolate until combined.
Fill Muffin Pan
- Pour cheesecake filling over cooled crusts until three-quarters full. Smooth tops and preheat oven to 325°F (160°C).
Bake
- Bake filled muffin pan for 20-25 minutes until edges are set but center is slightly jiggly. Cool on a wire rack.
Chill
- After 30 minutes at room temperature, transfer cheesecakes to the refrigerator for at least 1 hour.
Top and Serve
- Remove cheesecakes from the pan. Top with chocolate ganache and chocolate whipped cream. Garnish with chocolate shavings or fresh berries.
