Preparation
- Preheat your oven to 350°F (175°C) and place an unbaked pie shell in a 9-inch pie dish.
- In a large mixing bowl, combine brown sugar, rolled oats, granulated sugar, and a pinch of salt.
- Add milk, beaten eggs, softened unsalted butter, and vanilla extract to the dry mixture and stir until smooth.
- Carefully pour the filling mixture into the prepared pie shell.
- Bake the pie for about 45–50 minutes until the edges are golden brown and the center is set but slightly jiggly.
- Remove the pie from the oven and let it cool for 10–15 minutes before serving.
- Slice the pie into wedges and serve warm or chilled with vanilla ice cream or whipped cream.
