Preparation Steps
  1. In a mixing bowl, whisk together chia seeds and almond milk until combined. Let sit for 5 minutes.
  2. Stir again to prevent clumping. Cover with plastic wrap and refrigerate for at least 2 hours.
  3. In a high-speed blender, combine soaked cashews, coconut milk, maple syrup, lime juice, and zest. Blend until smooth.
  4. Once the chia pudding is ready, divide it among jars or cups and layer with the cashew mousse on top.
  5. Chill again for 2 hours to enhance flavors and firm up the layers.
  6. Serve chilled with lime slices or mint leaves as garnish.
