  • 2 slices Nutty Bread Whole grain or sourdough can be used
  • 4 oz Sliced Leftover Turkey Any leftover cooked turkey works well
  • 2 tbsp Cranberry Sauce Use homemade or store-bought
  • 2 leaves Green Leaf Lettuce Spinach or arugula can be substituted
For the Herbed Mayo
  • 2 tbsp Mayonnaise Greek yogurt can be a lighter alternative
  • 1 tsp Poultry Seasoning Pinch of dried thyme, sage, and rosemary
  • 1 tbsp Chopped Chives Green onions can be used instead
  • 1 pinch Salt Adjust according to taste
  • 1 pinch Pepper Adjust according to taste

Method
 

Steps
  1. In a medium bowl, combine mayonnaise, poultry seasoning, chopped chives, salt, and pepper. Mix thoroughly until smooth and creamy.
  2. Take two slices of nutty bread and spread a layer of the herbed mayo on one side of each slice.
  3. Layer one slice of bread with green leaf lettuce, followed by thick slices of turkey and a dollop of cranberry sauce.
  4. Place the second slice of bread mayo-side down on top and press gently.
  5. Cut the sandwich in half diagonally and serve immediately.
