- Cook Noodles: Bring a large pot of salted water to a boil. Add the LoMein noodles and cook for 3-4 minutes until al dente. Drain and rinse under cold water.
- Sauté Pork: Heat peanut oil in a skillet over medium-high heat. Add ground pork and sliced green onions. Sauté for 5-6 minutes until browned and cooked through.
- Prepare Sauce: In a small bowl, whisk together chicken broth, mirin, dark soy sauce, minced garlic, and grated ginger. Add sriracha to taste.
- Combine Ingredients: Lower heat and add noodles and coleslaw mix to the skillet. Pour sauce over and toss for a few minutes until evenly coated.
- Finish Cooking: Toss gently for another 2-3 minutes until coleslaw wilts and noodles heat through.
- Serve: Spoon into serving dishes and garnish with additional green onions before serving.
