Method
 

Step-by-Step Instructions
  1. Wrap the tofu in a kitchen towel to remove excess moisture for 15 minutes. Cut into cubes.
  2. Heat oil in a pan, add tofu cubes, and fry for 3 minutes on each side until golden-brown.
  3. In the same pan, add coconut oil, sauté shallots for 4-5 minutes, then add ginger and cook for 30 seconds.
  4. Add coconut milk, sambal oelek, red curry paste, and sugar to the shallots and ginger. Simmer for 3-4 minutes.
  5. Fold the crispy tofu into the sauce until well coated.
  6. Garnish with scallions, red pepper flakes, and sesame seeds. Serve immediately.
