Step-by-Step Instructions
  1. Begin by chopping the cauliflower into small florets and placing them into a food processor. Process until finely minced, resembling rice. Be careful not to puree.
  2. Transfer the minced cauliflower to a large bowl, crack in the eggs, and add the flour, baking powder, salt, and pepper. Mix until a thicker, paste-like mixture forms.
  3. Using an ice cream scoop or ¼ cup measure, scoop the mixture and flatten it into ⅓-inch thick patties. Place on a plate or tray.
  4. Heat avocado oil in a skillet over medium heat for about 2 minutes. Once shimmering, add the patties, frying for 2–3 minutes on each side until golden brown.
  5. Remove the fritters from the skillet and let them drain briefly on paper towels. Serve warm, paired with sour cream or your favorite dipping sauce.
