- In a mixing bowl, combine soy sauce, maple syrup, rice vinegar, sesame oil, and vegetable bouillon. Stir well.
- Heat oil in a skillet over medium-high heat. Add scallions and bell pepper, sauté for 3-4 minutes.
- Add garlic and ginger, sauté for 1-2 minutes until aromatic.
- Crumble tofu into the skillet, add smoked paprika and optional coriander, stir and cook for 5-6 minutes.
- Add cabbage and sauté for 4-5 minutes until softened.
- Pour the sauce over the stir fry, stir to combine, and cook for another 2-3 minutes.
- Serve immediately, garnishing with extra scallions. Pair with rice or noodles if desired.
