Ingredients
  

For the Stir Fry
  • 14 ounces super firm tofu drained and crumbled
  • 4 cups green cabbage thinly sliced
  • 2 medium scallions chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 teaspoon smoked paprika
  • 1 teaspoon coriander optional
For the Sauce
  • 3 tablespoons soy sauce light and dark mix
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or sugar
  • 1 teaspoon sesame oil
  • 1 pinch vegetable bouillon

Method
 

Recipe Steps
  1. In a mixing bowl, combine soy sauce, maple syrup, rice vinegar, sesame oil, and vegetable bouillon. Stir well.
  2. Heat oil in a skillet over medium-high heat. Add scallions and bell pepper, sauté for 3-4 minutes.
  3. Add garlic and ginger, sauté for 1-2 minutes until aromatic.
  4. Crumble tofu into the skillet, add smoked paprika and optional coriander, stir and cook for 5-6 minutes.
  5. Add cabbage and sauté for 4-5 minutes until softened.
  6. Pour the sauce over the stir fry, stir to combine, and cook for another 2-3 minutes.
  7. Serve immediately, garnishing with extra scallions. Pair with rice or noodles if desired.
