  • 280 g All-Purpose Flour or gluten-free flour if needed
  • 15 g Baking Powder check for freshness
  • 40 g Sugar adjust or substitute with honey if desired
  • 3 g Salt just a pinch goes a long way
  • 80 g Dried Cranberries can use fresh for a fresher taste
  • 1 unit Orange Zest or lemon zest as alternative
  • 70 g Unsalted Butter cold, high-fat butter preferred
  • 200-220 ml Cold Heavy Whipping Cream Greek yogurt can substitute
Optional Glaze
  • 50 g Powdered Sugar mix with orange juice for glaze
  • 1 unit Orange Juice fresh-squeezed is best

Method
 

Preparation Steps
  1. Preheat your oven to 220°C (428°F) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, sugar, orange zest, and salt.
  3. Cut the cold butter into small pieces and rub it into the dry mixture until it resembles coarse crumbs.
  4. Gently fold in the dried cranberries until evenly dispersed.
  5. Slowly pour in the cold heavy whipping cream and stir until a dough begins to form.
  6. Turn the dough onto a floured surface, press into a disc about 3-4 cm thick.
  7. Cut out scones using a round cutter and place them 3 cm apart on the baking sheet.
  8. Bake for 12-15 minutes until lightly golden on top.
  9. Allow scones to cool slightly on the baking sheet before serving.
