- Preheat your oven to 375°F (190°C).
- Halve the pears lengthwise and core them.
- Place pear halves cut-side up in a baking dish and dot with unsalted butter.
- Roast the pears for about 20 minutes until golden and fork-tender.
- Combine fresh cranberries and honey in a saucepan over medium heat, stirring occasionally for about 10 minutes.
- Allow pears to cool slightly, then fill each cavity with goat cheese and cranberry compote.
- Drizzle honey over stuffed pears and garnish with cinnamon and mint leaves if desired.
- Serve warm or slightly chilled.
