Step-by-Step Instructions
  1. Prepare Hot Honey (optional): In a small saucepan, combine honey and red pepper flakes over low heat for about 5 minutes. Stir gently and, if desired, add a splash of apple cider vinegar for tang. Remove from heat and cool slightly.
  2. Cook Beef Bacon: Heat a large skillet over medium heat and add thick-cut beef bacon. Cook for 5–7 minutes until crispy, then drain and break into pieces.
  3. Prepare Apple and Cheese: Thinly slice the apple and either grate or slice the cheddar cheese, aiming for 1/8-inch thickness for the apples.
  4. Assemble Sandwiches: Spread softened butter on one side of each bread slice. On the unbuttered side of four slices, layer cheese, apple slices, and bacon pieces. Drizzle hot honey on top, then finish with remaining cheese and buttered slices facing out.
  5. Grill Sandwiches: Heat the skillet over medium-low heat. Cook the assembled sandwiches for 4–5 minutes until golden brown, pressing down with a spatula.
  6. Finish and Serve: Flip sandwiches and grill for another 3–4 minutes until cheese is melted. Let cool, cut diagonally, and serve warm with extra hot honey or flaky sea salt.
