Step-by-Step Instructions for Garlic Shrimp Mofongo
  1. Peel and cut the plantains into 1–2 inch pieces. Boil in salted water for 10–15 minutes until tender.
  2. In a mortar and pestle, combine the boiled plantains with minced garlic and olive oil or melted butter. Mash until smooth yet slightly chunky.
  3. Heat butter or olive oil in a skillet. Sauté minced garlic for about 1 minute, then add shrimp, season with salt, pepper, and paprika. Cook until shrimp turn pink.
  4. Mold mofongo into a bowl shape on serving plates and top with garlic shrimp and pan juices.
  5. Garnish with fresh cilantro or lime wedges and serve warm.
