- Peel and cut the plantains into 1–2 inch pieces. Boil in salted water for 10–15 minutes until tender.
- In a mortar and pestle, combine the boiled plantains with minced garlic and olive oil or melted butter. Mash until smooth yet slightly chunky.
- Heat butter or olive oil in a skillet. Sauté minced garlic for about 1 minute, then add shrimp, season with salt, pepper, and paprika. Cook until shrimp turn pink.
- Mold mofongo into a bowl shape on serving plates and top with garlic shrimp and pan juices.
