Preparation Steps
- Preheat your oven to 400°F (200°C). Slice the top off a medium head of garlic and drizzle with olive oil, wrapping it in aluminum foil. Roast for 30-35 minutes until soft and fragrant, then set aside to cool.
- While the garlic is roasting, heat 2 tablespoons of olive oil in a skillet over medium heat. Add 1 cup of chopped fresh spinach and sauté for about 2-3 minutes, until wilted. Season lightly with salt and pepper.
- In the bowl with your roasted garlic, mash the cloves and stir in 1 cup of ricotta cheese, half of the shredded mozzarella, and 1 teaspoon of dried oregano. Mix until creamy.
- Spread the garlic-ricotta mixture evenly over the pre-made pizza crust, layer with sautéed spinach, and top with remaining mozzarella, crumbled feta, and optional crushed red pepper flakes.
- Bake the pizza in the preheated oven for 15-20 minutes until the crust is golden-brown and the cheese is bubbly.
- Allow the pizza to cool for a few minutes, then garnish with fresh basil leaves before slicing.
