Preparation
- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels and set aside.
- In a medium bowl, combine all-purpose flour, ground coriander, paprika, ground cumin, salt, black pepper, and red pepper flakes. Mix well.
- In another bowl, whisk together fresh lemon juice, extra virgin olive oil, and softened butter. Stir in minced garlic.
- Dip each cod fillet into the lemon-garlic mixture and then dredge into the seasoning mixture.
- Heat olive oil in a skillet over medium-high heat. Sear the coated cod for 2 minutes on each side until golden brown.
- Pour the remaining lemon-garlic sauce over the cod fillets and transfer the skillet to the oven. Bake for 8-10 minutes.
- Once baked, sprinkle chopped parsley over the top and serve immediately.
