Ingredients
  

For the Cod
  • 4 fillets Cod Fresh cod preferred
  • 1 cup All-Purpose Flour Use gluten-free flour for gluten-free option
For the Seasoning Mixture
  • 1 teaspoon Ground Coriander Freshly ground is best
  • 1 teaspoon Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Red Pepper Flakes Adjust to taste
For the Sauce
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 2 tablespoons Extra Virgin Olive Oil Quality oil preferred
  • 2 tablespoons Butter Unsalted
  • 2 cloves Garlic Minced
For Garnishing
  • 1/4 cup Fresh Parsley Chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels and set aside.
  3. In a medium bowl, combine all-purpose flour, ground coriander, paprika, ground cumin, salt, black pepper, and red pepper flakes. Mix well.
  4. In another bowl, whisk together fresh lemon juice, extra virgin olive oil, and softened butter. Stir in minced garlic.
  5. Dip each cod fillet into the lemon-garlic mixture and then dredge into the seasoning mixture.
  6. Heat olive oil in a skillet over medium-high heat. Sear the coated cod for 2 minutes on each side until golden brown.
  7. Pour the remaining lemon-garlic sauce over the cod fillets and transfer the skillet to the oven. Bake for 8-10 minutes.
  8. Once baked, sprinkle chopped parsley over the top and serve immediately.
