For the Bean Mixture
  • 16 oz Rosarita Traditional Refried Beans Any traditional refried beans work
  • 10 oz Rotel Diced Tomatoes & Green Chilies Drain beforehand
  • 0.75 teaspoon Ancho chili powder Swap with regular chili powder if preferred
  • 0.5 teaspoon Ground cumin Adjust to taste
For Toppings
  • 2 cups Shredded iceberg or romaine lettuce For a refreshing crunch
  • 1 cup Shredded Mexican blend cheese Any melting cheese can be used
  • 1 cup Pico de gallo Store-bought or homemade
  • 6 tablespoons Sour cream Optional garnish

Preparation
  1. Prepare the Guacamole: Halve avocados, scoop flesh into a bowl, mash until creamy but chunky, then mix in lime juice, garlic powder, salt, and pepper.
  2. Heat the Bean Mixture: In a saucepan, warm refried beans, stir in Rotel, chili powder, and cumin; heat until combined.
  3. Assemble the Tostadas: Preheat oven to 350°F, warm tostada shells, spread beans on each shell, top with shredded chicken.
  4. Add Fresh Toppings: Top with lettuce, cheese, guacamole, and pico de gallo for a colorful presentation.
