  • 1 tbsp Salt kosher salt recommended
  • 1 tsp Black Pepper freshly ground
  • 2 tbsp Extra Virgin Olive Oil can swap with neutral oil
  • 2 tbsp Unsalted Butter for added richness
  • 2 Brown Onions chopped
  • 4 cloves Garlic finely minced
  • 1 each Capsicum/Bell Peppers 1 red and 1 yellow preferred
  • 2 cups Tomatoes fresh or canned
  • 2 tbsp Hungarian-Style Paprika sweet kind
  • 1 tsp Caraway Seeds optional
  • 1 leaf Bay Leaf remove before serving
  • 4 cups Beef Stock/Broth for best flavor
  • 2 cups Carrots chopped
  • 2 cups Potatoes cubed
  • 1/4 cup Parsley for garnishing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Cut the beef chuck into bite-sized cubes and season generously with salt and black pepper.
  3. In your preheated pot, heat olive oil and butter, then sauté the chopped onions until golden.
  4. Add the seasoned beef cubes and brown for about 2 minutes, stirring occasionally.
  5. Incorporate minced garlic, diced bell peppers, and tomatoes, and stir for 3 minutes.
  6. Sprinkle in paprika, caraway seeds (if using), and bay leaf, stirring for 30 seconds.
  7. Pour in beef stock, cover the pot, and simmer in the oven for 1.5 hours.
  8. Add chopped carrots and potatoes, cover again, and return to the oven for another 30 minutes.
  9. Ladle the goulash into bowls, garnishing with chopped parsley before serving.
