Method
 

Cake Instructions
  1. Preheat oven to 350°F (175°C), prepare three 8-inch cake pans with parchment and non-stick spray.
  2. In a bowl, mix all dry ingredients: flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  3. Add softened butter and mix until crumbly; add egg whites and mix until just combined.
  4. Incorporate buttermilk, oil, and vanilla; blend until smooth and creamy.
  5. Divide batter among pans and bake for 33-35 minutes. Cool for 10 minutes in pans before transferring to a wire rack.
  6. For the frosting, beat butter until creamy, add powdered sugar, cream, and vanilla; mix to desired consistency.
  7. Assemble by layering cake with frosting and cookie butter, smoothing the outer layer and chill for 30 minutes.
  8. Decorate the sides with crushed Biscoff cookies and pipe additional frosting on top.
