Ingredients

For the Base
  • 2 cups Rolled Oats Use rolled oats, not quick oats for better texture.
  • 1 scoop Unflavoured Protein Powder Can be substituted with vanilla-flavored powder.
  • 1 teaspoon Cinnamon
  • 3 medium Bananas The riper, the better for optimal sweetness.
  • 2 large Eggs Substitute with 2 flax “eggs” for a vegan option.
For the Moisture
  • 1 cup Milk Higher protein varieties like dairy or soy are recommended.
  • 1/4 cup Maple Syrup Acts as a natural sweetener.
  • 1 teaspoon Vanilla Extract
For the Extra Goodness
  • 1/4 cup Hemp Seeds Optional but recommended for extra nutrients.
  • 1/2 cup Chocolate Chips Can be adjusted or omitted based on preference.

Equipment

  • Oven
  • Large Bowl
  • Baking pan

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, combine the rolled oats, unflavoured protein powder, and cinnamon. Stir well.
  3. In a separate bowl, mash the ripe bananas, then whisk in the eggs, milk, maple syrup, and vanilla extract until well blended.
  4. Pour the wet mixture into the bowl of dry ingredients and stir until just combined. Fold in the hemp seeds and chocolate chips.
  5. Transfer the mixed batter into the lined baking pan, spreading it evenly and adding extra chocolate chips and banana slices on top.
  6. Bake for 30 minutes or until the top is golden brown and a toothpick comes out clean.
  7. Let it cool for about 20 minutes before slicing and serving warm, topped with maple syrup, yogurt, or nut butter.
