Ingredients
  

Edamame Spread
  • 1 cup frozen edamame for convenience
  • 1 cup fresh basil can substitute with parsley or cilantro
  • 1 whole lemon for juice and zest
  • 1 clove garlic grated fresh
  • 2 tablespoons tahini or soaked cashews for nut-free
  • 2 tablespoons nutritional yeast or soy sauce as a substitute
  • 2 tablespoons hemp hearts or sunflower seeds as a substitute
For Serving
  • 2 slices Bread of choice whole grain, rye, or gluten-free
  • toppings cucumber slices, pickled onions, or chili oil

Method
 

Edamame Spread Preparation
  1. Add the frozen edamame, fresh basil leaves, tahini, hemp hearts, nutritional yeast, lemon juice and zest, grated garlic, and a pinch of salt into a food processor. Blend until smooth, scraping down sides as needed.
  2. To achieve a lighter consistency, add a few tablespoons of ice water and blend again until smooth. Set aside while toasting bread.
Bread Preparation
  1. Toast the bread slices for about 3-5 minutes until golden brown.
  2. Rub a cut garlic clove over each slice for added flavor.
Assembling the Toast
  1. Spread a thick layer of the edamame mixture onto each piece of toast.
  2. Add your choice of toppings like cucumber slices, pickled onions, or a drizzle of chili oil.
