Step‑by‑Step Instructions

  3. Gradually sift in the flour, stirring continuously for about 15 minutes until smooth and golden.

  5. Line a container with cling wrap, pour in the warm roux, smooth the surface, and refrigerate overnight.
  6. Remove from container using cling wrap. Store in the refrigerator for 2-3 weeks or freeze in a ziplock bag.
