Ingredients
  

For the Pretzels
  • 1.5 cups Warm Water between 110°F to 115°F
  • 1 tablespoon Sugar
  • 1 teaspoon Kosher Salt
  • 2.25 teaspoons Active Dry Yeast
  • 4 cups All-Purpose Flour
  • 4 tablespoons Melted Butter
  • 0.67 cups Baking Soda
  • 1 each Egg Yolk with Water for egg wash
  • to taste tablespoons Pretzel Salt or coarse sea salt
For the Salsa Verde Cheese Sauce
  • 2 tablespoons Butter for roux
  • 2 tablespoons Flour
  • 1 cup Milk whole or low-fat
  • 1 cup Grated Cheddar Cheese
  • 0.5 cups Velveeta Cheese Sauce or alternative
  • 0.5 cups Salsa Verde

Method
 

Preparation
  1. Combine warm water, sugar, and kosher salt in a bowl. Sprinkle yeast on top and let foam for 5 minutes.
  2. Add flour and melted butter to the yeast mixture. Mix until dough is smooth and elastic.
  3. Transfer dough to an oiled bowl, cover, and let rise for 50-55 minutes.
  4. Preheat the oven to 450°F and line baking sheets with parchment paper.
  5. In a pot, boil 10 cups of water, adding baking soda carefully.
  6. Shape the risen dough into pretzels and place them on lined sheets.
  7. Boil each pretzel in the baking soda water for 30 seconds.
  8. Brush pretzels with egg wash and sprinkle with pretzel salt.
  9. Bake pretzels for 12-14 minutes or until golden brown.
  10. Prepare the cheese sauce by melting butter, adding flour, then milk. Stir in cheeses and salsa.
