Step-by-Step Instructions
  1. In a mixing bowl, whisk together soy sauce, honey, peanut butter, rice vinegar, ginger, garlic, cumin, coriander, and red pepper flakes. Add sesame oil and lime juice, whisking until smooth.
  2. Place chicken thighs in a large bowl or zip-top bag. Pour marinade over chicken and seal. Refrigerate for at least 2 hours, preferably overnight.
  3. Preheat grill to medium-high (375°F) or oven to 400°F (200°C). Remove chicken from marinade, allowing excess to drip off. Baste chicken with reserved marinade.
  4. Grill for 6-8 minutes per side or roast for 35-40 minutes until internal temperature reaches 165°F. Baste occasionally.
  5. Remove chicken from heat, let rest for a few minutes. Garnish with cilantro and sesame seeds. Serve hot.
