- Preheat the oven to 375°F (190°C).
- In a large skillet, melt 2-3 tablespoons of butter over medium-high heat.
- Add the diced yellow onion and sauté for about 2-3 minutes until fragrant and translucent.
- Stir in the shredded cabbage and season lightly with sea salt. Cook for about 5-6 minutes until softened and lightly golden.
- Add minced garlic and sauté for an additional minute. Keep an eye on it to prevent burning.
- Stir in the frozen hash browns and 1½ cups of Irish cheddar. Mix thoroughly and smooth the top for even cooking.
- Transfer the skillet to the preheated oven and bake for 30-35 minutes until golden brown and crispy.
- Remove from the oven, sprinkle remaining 1 cup of cheddar over the top, and return to bake for an additional 4-5 minutes.
- Let cool slightly and garnish with chopped green onions before serving.
