  • 2 medium Onions Chopped
  • 4 cloves Garlic Minced
  • 2 sprigs Fresh Herbs (Thyme or Rosemary) Fresh is preferred
For the Garlic Mashed Potatoes
  • 2 lbs Potatoes (Yukon Gold or Russet) Peeled and chopped
  • 1 cup Milk Whole or cream for extra richness
  • 4 tablespoons Butter Unsalted
  • 4 cloves Garlic Peeled and added to the potatoes

Method
 

Step-by-Step Instructions
  1. Season the beef short ribs generously with salt and pepper. Sear in a Dutch oven until browned on all sides.
  2. Remove ribs, sauté onions and garlic until soft. Deglaze with red wine and simmer.
  3. Add beef broth to cover ribs halfway and add fresh herbs. Simmer and cover.
  4. Braise in an oven at 325°F for 2.5 to 3 hours until tender.
  5. Boil potatoes and garlic in salted water until fork-tender. Drain and let steam off.
  6. Mash potatoes and garlic, adding butter and milk until smooth. Season with salt and pepper.
  7. Serve mashed potatoes with short ribs on top and braising sauce drizzled over.
