- Season the beef short ribs generously with salt and pepper. Sear in a Dutch oven until browned on all sides.
- Remove ribs, sauté onions and garlic until soft. Deglaze with red wine and simmer.
- Add beef broth to cover ribs halfway and add fresh herbs. Simmer and cover.
- Braise in an oven at 325°F for 2.5 to 3 hours until tender.
- Boil potatoes and garlic in salted water until fork-tender. Drain and let steam off.
- Mash potatoes and garlic, adding butter and milk until smooth. Season with salt and pepper.
