Ingredients
  

For the Stir Fry
  • 2 tablespoons Vegetable Oil or canola grapeseed oil
  • 1 cup Crimini Mushrooms or button mushrooms
  • 1 cup Broccoli Florets cut into bite-sized pieces
  • 1 can Canned Baby Corn or fresh corn
  • 1 sliced Red Bell Pepper or yellow/orange bell peppers
  • 1 cup Snap Peas or frozen peas
  • 1 cup Zucchini or yellow squash
  • 1 cup Carrots thinly sliced
For the Sauce
  • 3 tablespoons Low-Sodium Soy Sauce or Tamari or coconut aminos for gluten-free
  • 1 tablespoon Toasted Sesame Oil or regular sesame oil
  • 3 cloves Garlic minced
  • 1 tablespoon Fresh Ginger grated or ground
  • 1 tablespoon Brown Sugar or Honey maple syrup as a vegan alternative
  • a pinch Red Pepper Flakes optional
  • 1 tablespoon Cornstarch or arrowroot starch
  • ½ cup Cold Water
  • 2 stalks Green Onions for garnish

Method
 

Cooking Steps
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the crimini mushrooms, broccoli florets, canned baby corn, sliced red bell pepper, snap peas, diced zucchini, and thinly sliced carrots. Toss and stir-fry for 5-6 minutes.
  3. In a small bowl, whisk together the soy sauce, toasted sesame oil, minced garlic, grated ginger, brown sugar, and red pepper flakes.
  4. Mix cornstarch with cold water until smooth, then stir this mixture into the sauce to thicken.
  5. Pour the prepared sauce over the stir-fried vegetables and toss gently. Allow everything to simmer for an additional 5 minutes.
  6. Serve hot, garnished with freshly sliced green onions.
