  • 1 lb Ground beef or turkey or substitute with ground chicken or lentils for vegan
  • 2 tbsp Jerk seasoning or Caribbean curry powder for a different flavor
  • 1/2 cup Breadcrumbs use gluten-free if needed
  • 1 small Onion finely chopped; fresh is best
  • 2 cloves Garlic minced; or garlic powder if in a hurry
For the Coconut Curry Sauce
  • 1 can Coconut milk full-fat for richness, light for a healthier option
  • 2 tbsp Tomato paste or substitute with sugar
  • 1 cup Chicken or vegetable broth low-sodium recommended
  • 1 tbsp Curry powder spicy or mild based on preference
  • 1 tbsp Brown sugar or honey/maple syrup
  • 2 tbsp Soy sauce tamari for gluten-free
For Garnish
  • 1 bunch Fresh cilantro or green onions as a substitute

Method
 

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine ground beef or turkey, breadcrumbs, jerk seasoning, onion, garlic, and salt and pepper. Blend until just incorporated.
  2. Roll the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
  3. Heat oil in a skillet over medium heat. Sear the meatballs for 2-3 minutes on each side until golden-brown.
  4. In the same skillet, add coconut milk, tomato paste, broth, curry powder, brown sugar, and soy sauce. Simmer for about 5 minutes.
  5. Return meatballs to the skillet, ensuring they're submerged. Cover and simmer for 20-25 minutes.
  6. Taste the sauce, adjust seasoning if needed, and serve over rice or quinoa, garnished with cilantro.
