- Prepare the pan by greasing a 9x9-inch baking pan with butter or lining it with parchment paper.
- Melt 4 tablespoons of butter in a large saucepan over low heat for 2-3 minutes until melted.
- Add 6 cups of mini marshmallows to the melted butter and stir for 4-5 minutes until smooth.
- Mix in the zest of one lemon and a splash of lemon extract (if using) once marshmallows are melted.
- Fold in 6 cups of Rice Krispies cereal and mix gently.
- Press the mixture into the prepared pan using a buttered spatula.
- Melt 1 cup of white chocolate chips in a microwave-safe bowl in intervals of 30 seconds.
- Drizzle the melted white chocolate over the pressed mixture.
- Allow the pan to sit at room temperature for 30 minutes to let the white chocolate set.
- Cut into squares and enjoy.
