Preparation Steps
- If you prefer a crunchier texture, lightly toast the bread slices for about 2-3 minutes.
- In a medium bowl, mash the ripe avocado with a fork, adding lemon juice, salt, and pepper.
- Spread the avocado mixture on one side of each toasted bread slice.
- Layer the thinly sliced cucumber on top of the avocado spread.
- Add fresh leafy greens and halved cherry tomatoes on top of the cucumbers.
- Sprinkle with red onion and fresh herbs.
