  • 2 slices bread of choice whole grain, sourdough, or rye; gluten-free options available
For the Filling
  • 1 whole ripe avocado Select one that’s firm but yielding to touch
  • 1 medium cucumber thinly sliced; can swap with zucchini ribbons or bell peppers
  • 1 cup fresh leafy greens lettuce, spinach, or arugula
  • 1/2 cup cherry tomatoes halved (optional)
  • 1 small red onion thinly sliced; adjust for milder taste
  • 1 handful fresh herbs such as dill, basil, or cilantro
  • 1 tablespoon lemon juice to prevent browning and add zing
  • salt to taste
  • pepper to taste
  • 1 tablespoon olive oil optional, or favorite sandwich spread

Method
 

Preparation Steps
  1. If you prefer a crunchier texture, lightly toast the bread slices for about 2-3 minutes.
  2. In a medium bowl, mash the ripe avocado with a fork, adding lemon juice, salt, and pepper.
  3. Spread the avocado mixture on one side of each toasted bread slice.
  4. Layer the thinly sliced cucumber on top of the avocado spread.
  5. Add fresh leafy greens and halved cherry tomatoes on top of the cucumbers.
  6. Sprinkle with red onion and fresh herbs.
  7. Optionally drizzle some olive oil or favorite spread before placing the second slice of bread on top.
  8. Slice the sandwich in half and serve immediately.
