- Preheat your oven to 300°F (150°C).
- In a food processor, add flour, icing sugar, salt, grapefruit zest, and fresh thyme. Pulse until well combined. Gradually add cold vegan butter until the dough forms a rough ball.
- Press the dough into a 9-inch tart pan, ensuring an even thickness. Bake for 35-40 minutes until edges are golden and center is firm. Cut into 16 pieces while warm.
- Allow cookies to cool completely in the tart pan to firm up.
- In a mixing bowl, whisk together sifted powdered sugar and grapefruit juice for icing consistency. Optionally add food gel coloring.
- Dip cookie tops into the icing, let excess drip off. Place on a drying rack and repeat for a second coat. Garnish optionally before icing dries.
