Method
 

Directions
  1. Preheat your oven to 300°F (150°C).
  2. In a food processor, add flour, icing sugar, salt, grapefruit zest, and fresh thyme. Pulse until well combined. Gradually add cold vegan butter until the dough forms a rough ball.
  3. Press the dough into a 9-inch tart pan, ensuring an even thickness. Bake for 35-40 minutes until edges are golden and center is firm. Cut into 16 pieces while warm.
  4. Allow cookies to cool completely in the tart pan to firm up.
  5. In a mixing bowl, whisk together sifted powdered sugar and grapefruit juice for icing consistency. Optionally add food gel coloring.
  6. Dip cookie tops into the icing, let excess drip off. Place on a drying rack and repeat for a second coat. Garnish optionally before icing dries.
