  • 1 lb Sirloin Steak The star of the bowl.
  • 2 Tbsp Olive Oil For marinating.
  • 3 cloves Garlic Fresh, minced.
  • 2 Tbsp Lemon Juice Freshly squeezed.
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • 1 tsp Salt
  • 1 tsp Black Pepper
For the Base
  • 2 cups Cooked Grains Choose brown rice, quinoa, or cauliflower rice.
For the Veggies
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Cucumber Diced.
  • 1/2 cup Red Onion Sliced.
  • 1/2 cup Kalamata Olives Optional, can be omitted.
  • 1/4 cup Feta Cheese Optional.
  • 1 handful Fresh Herbs Like parsley or dill.
For the Tzatziki
  • 1 cup Greek Yogurt Or coconut yogurt for dairy-free.
  • 1 cup Roasted Chickpeas For added protein.

Step-by-Step Instructions
  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper. Whisk until well mixed. Add the sirloin steak and coat it thoroughly in the marinade. Let it marinate for at least 30 minutes.
  2. While the steak marinates, prepare the homemade tzatziki. In a separate bowl, combine Greek yogurt, minced garlic, diced cucumber, lemon juice, salt, and chopped fresh herbs. Mix well and refrigerate for 15-20 minutes.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to create a light lemon vinaigrette.
  4. Heat a skillet or grill pan over medium-high heat. Once hot, add the marinated steak, cooking for 4-5 minutes on each side. Let the steak rest for at least 5 minutes before slicing it thinly.
