Step-by-Step Instructions
  1. Start by patting the beef chuck roast cubes dry with paper towels, season with salt and pepper.
  2. In a large Dutch oven, heat vegetable oil over medium-high heat and sear the beef cubes for 3-4 minutes on each side.
  3. In the same pot, sauté chopped onion for 4-5 minutes until translucent, then add minced garlic and grated ginger.
  4. Return the seared beef to the pot, pour in soy sauce, beef broth, brown sugar, and rice vinegar, stirring to combine.
  5. Bring to a simmer, then cover and braise on low heat for 2-3 hours until fork-tender.
  6. Mix cornstarch with cold water to form a slurry, then add to the pot, stirring until sauce thickens.
  7. Serve over rice or noodles, optionally garnish with green onions or sesame seeds.
