- Begin by heating a non-stick skillet over medium heat. Add 1 tablespoon of unsalted butter and allow it to melt completely, swirling the pan to coat the bottom evenly.
- Place one slice of bread in the skillet, letting it soak up the melted butter. Generously spread an even layer of spinach pesto on the bread, then carefully break apart the fresh burrata cheese onto the pesto. Top with another slice of bread.
- Allow the sandwich to cook undisturbed for about 3-4 minutes or until the bottom slice of bread is a deep golden brown.
- With care, flip the sandwich over and continue to cook the other side for another 3-4 minutes, pressing down gently.
- Once both sides are perfectly toasted, remove it from the skillet. Slice the sandwich in half and serve immediately.
