  • 1 package Pie Crusts Store-bought or homemade.
  • 2 tablespoons Butter Unsalted, for greasing.
Filling
  • 6 large Eggs Main structure and source of protein.
  • 1 cup Whole Milk Low-fat milk can be a substitute.
  • 1/2 cup Heavy Cream Can use half-and-half.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Freshly ground preferred.
  • 1/4 teaspoon Cayenne Pepper Optional for a kick.
Vegetables and Protein
  • 1 cup Fresh Spinach Thawed frozen spinach works.
  • 1/2 cup Onion Can be used raw or sautéed.
  • 1 cup Cooked Ham Can swap for bacon or sausage.
  • 1 cup Shredded Swiss Cheese Other options include Gruyère, cheddar, or feta.

Method
 

Preparation
  1. Roll out the pie crust and cut into 4-inch circles. Grease a muffin tin with butter and press each dough circle into the cups. Chill in the freezer for 10–15 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. In a bowl, whisk eggs, whole milk, heavy cream, salt, pepper, and cayenne. Fold in spinach, onion, ham, and cheese.
  4. Pour the mixture into the chilled crusts, filling three-quarters full.
  5. Bake for 25-30 minutes, until edges are browned and a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then carefully remove and serve.
