Preparation Steps
  1. In a medium pot, pour in your high-quality chicken broth and set it over medium-high heat. Add finely grated ginger, chopped green onions, and smashed garlic cloves, along with light soy sauce. Stir gently to combine and allow it to come to a rolling boil, which should take about 5–7 minutes.
  2. Once the broth reaches a boil, carefully add the white parts of the chopped napa cabbage along with any optional mushrooms you choose to use. Let everything cook together for about 4 minutes until the cabbage begins to soften, stirring occasionally.
  3. Next, stir in the tender green parts of the napa cabbage and the soft tofu, being cautious not to break the tofu too much. Allow it to simmer for an additional 2-3 minutes.
  4. Stir in chicken bouillon powder or salt, along with a dash of white pepper for warmth. Drizzle with sesame oil to finish and adjust the seasoning as needed.
  5. Ladle the soup into warm bowls, including a mix of the napa cabbage, tofu, and broth in each serving. Enjoy your comforting soup.
