- In a medium pot, pour in your high-quality chicken broth and set it over medium-high heat. Add finely grated ginger, chopped green onions, and smashed garlic cloves, along with light soy sauce. Stir gently to combine and allow it to come to a rolling boil, which should take about 5–7 minutes.
- Once the broth reaches a boil, carefully add the white parts of the chopped napa cabbage along with any optional mushrooms you choose to use. Let everything cook together for about 4 minutes until the cabbage begins to soften, stirring occasionally.
- Next, stir in the tender green parts of the napa cabbage and the soft tofu, being cautious not to break the tofu too much. Allow it to simmer for an additional 2-3 minutes.
- Stir in chicken bouillon powder or salt, along with a dash of white pepper for warmth. Drizzle with sesame oil to finish and adjust the seasoning as needed.
- Ladle the soup into warm bowls, including a mix of the napa cabbage, tofu, and broth in each serving. Enjoy your comforting soup.
