- Preheat your oven to 170°C (325°F) and line a baking tray with parchment paper.
- In a medium bowl, whisk together the whole wheat flour, vanilla protein powder, sugar, and baking powder until well combined.
- In another bowl, blend the applesauce, neutral oil, and vanilla extract until smooth. Combine with the dry mixture.
- Wrap the dough in plastic wrap and chill in the refrigerator for about 15 minutes.
- Divide the dough and roll out one portion to about 1/8 inch thick, and cut into 8 rectangles.
- Assemble the pop tarts by placing half the rectangles on the tray and adding strawberry jam, top with remaining rectangles.
- Bake for 10 to 15 minutes until the edges are golden brown.
- Whisk together the confectioners' sugar, milk or water, and vanilla extract for the glaze.
- Drizzle the glaze over the cooled pop tarts and enjoy.
