Method
 

Step-by-Step Instructions
  1. Preheat your oven to 170°C (325°F) and line a baking tray with parchment paper.
  2. In a medium bowl, whisk together the whole wheat flour, vanilla protein powder, sugar, and baking powder until well combined.
  3. In another bowl, blend the applesauce, neutral oil, and vanilla extract until smooth. Combine with the dry mixture.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for about 15 minutes.
  5. Divide the dough and roll out one portion to about 1/8 inch thick, and cut into 8 rectangles.
  6. Assemble the pop tarts by placing half the rectangles on the tray and adding strawberry jam, top with remaining rectangles.
  7. Bake for 10 to 15 minutes until the edges are golden brown.
  8. Whisk together the confectioners' sugar, milk or water, and vanilla extract for the glaze.
  9. Drizzle the glaze over the cooled pop tarts and enjoy.
