  • 2 tablespoons honey or maple syrup Agave syrup is a great vegan alternative
  • 2 tablespoons sesame oil Olive oil may alter the flavor
  • to taste salt and pepper Soy sauce can be used for a different flavor

Equipment

  • Mixing Bowl
  • small bowl
  • whisk
  • spatula

Method

Step 1: Prepare the Vegetables
  1. In a large mixing bowl, combine 2 cups of diced ripe mangoes, 2 cups of shredded green cabbage, 1 cup of grated carrot, 1 cup of sliced red bell pepper, 1 cup of thinly sliced red onion, and ¼ cup of chopped fresh cilantro. Use a wooden spoon to gently toss the ingredients together until they are evenly distributed.
Step 2: Whisk the Dressing
  1. In a separate small bowl, whisk together ¼ cup of fresh lime juice, 2 tablespoons of honey (or maple syrup), 2 tablespoons of sesame oil, along with a pinch of salt and pepper. Ensure the dressing is well combined and smooth, taking about 1-2 minutes.
Step 3: Combine the Slaw and Dressing
  1. Pour the dressing over the mango-vegetable mixture. Using a spatula, gently toss the slaw and dressing together, ensuring every piece is well coated in the zesty mixture. This step should take about 1 minute.
Step 4: Allow the Slaw to Marinate
  1. Let the Quick And Easy Mango Slaw sit for 5-10 minutes at room temperature to allow the flavors to meld. The vegetables will soften slightly while retaining their crunch.
Step 5: Serve the Slaw
  1. Once marinated, give the slaw a gentle toss before serving. It can be enjoyed chilled or at room temperature.
