Step-by-Step Instructions
  1. Wash the fresh spinach under cool running water, trim the ends, and cut into 2-inch pieces.

  3. Transfer the spinach to a bowl of ice water for 1-2 minutes to cool down, then squeeze out excess water.
  4. In a mixing bowl, combine the spinach with minced garlic, chopped green onion, soy sauce, salt, toasted sesame oil, and toasted sesame seeds.
  5. Serve the dish cold or at room temperature as a side.
